3 pounds orange flesh sweet potatoes (peeled and trimmed)
1/2 cup pure maple syrup (dark amber grade preferred)
2 ounces grass-fed butter (melted gently)
1 teaspoon ground cinnamon (Ceylon variety preferred)
1/2 teaspoon ground nutmeg
1 teaspoon pure vanilla extract
1/4 teaspoon sea salt
Instructions
1. Preheat oven to precisely 375 degrees Fahrenheit and peel the sweet potatoes.
2. Cut the peeled potatoes into uniform half-inch thick circular rounds.
3. Whisk the pure maple syrup, melted butter, ground cinnamon, nutmeg, vanilla extract, and sea salt.
4. Toss the sweet potato slices in the glaze and layer slightly overlapping in a 9×13 inch glass baking dish.
5. Cover tightly with heavy-duty aluminum foil and bake for 30 minutes, then uncover and bake for 15 to 20 minutes more.
Notes
Storage: Store in an airtight glass container in the refrigerator for up to four days.
Substitution: Refined coconut oil can replace grass-fed butter for a dairy-free option.
